That's right, it's May 5th... Cinco de Mayo. Not like I celebrate or anything but, it does mean I'm stuck here in Lousy-ana with no options for some good Mexican food. :( If I was in Dallas I probably would have been eating Mexican food so frequently that today wouldn't matter but..... that's not the point!
I was getting some things at Walmart this morning and found myself wanting some fajitas again (I did last week too). Unfortunately, Walmart does not know the concept of carrying the right beef for fajitas!! So I'm going to be lame and make chicken fajitas for a little Cinco de Mayo lunch/dinner for myself. Nothing against chicken but, when I want fajitas I want beef dangit!!
